Sunday Dinner: Stir Fry

I like to think of stir fry as an extremely high-ROI meal: the prep work is relatively light, the portion sizes are generous, and the flavors are bold. Big chunks of ginger and garlic in the marinade add an extra zip of texture to the finished product, which is a great leftover lunch the next day. Beef Stir Fry

Yield: 4 servings


  • ½ c. soy sauce
  • ¼ c. peanut oil (scant)
  • ¼ c. rice wine vinegar
  • 1 tsp. toasted sesame oil
  • dash hot sesame oil
  • 4 cloves garlic, minced
  • 1 Tbsp. ginger, minced
  • 1 Tbsp. honey
  • allspice
  • Chinese 5-spice
  • ground cloves
  • sesame seeds
  • hot pepper flakes / crushed Tien Tsin peppers

Vegetables and protein:

  • 2 small heads broccoli
  • 1 large red bell pepper
  • 1 large sweet onion
  • 1 lb. protein of choice (beef, chicken, pork, tofu)

Whisk marinade ingredients together to emulsify, adjusting spices to taste. Prepare protein, slicing thinly for meat or pressing to remove liquid for tofu. (For best results, slice protein while still partially frozen.) Immerse protein in marinade for at least 15 minutes prior to frying.

Slice vegetables about ½ inch thick, by hand or on a mandoline. Heat 1 Tbsp. peanut oil in large pan over medium-high heat. Saute broccoli, pepper, and onion, one at a time, until browned. Move vegetables to large serving bowl and cover.

Without adding more oil, drop marinated protein in one piece at a time, turning frequently. Move protein to serving bowl when cooked, adding more pieces to pan as you go. When all protein is cooked, turn down heat and pour remaining marinade into the pan, plus water to rinse out bowl. Stirring constantly, deglaze pan and reduce marinade into sauce. Pour over protein and vegetables, toss, and serve over rice or noodles.

*If you are making noodles instead of rice, add parboiled noodles to sauce as it reduces, then toss together with protein and vegetables.
